* 1 big glob of olive oil
* 1 spoonful curry paste
* 1 can coconut milk
* arbitrary veggies
First, if you are using onions or garlic, stir fry them with some oil in your favorite curry-making pot
Heat pan, add oil and curry paste
Bloom for 30-60s, until there's curry spice aroma
Now, add ~70% of a can of coconut milk
Also, add veggies that will take awhile to boil - potatoes, carrots, etc.
Simmer until your veggies are soft, which normally takes ~10-20 mins, depending
Add the rest of the coconut milk and any final veggies - I almost always add my fav veggie,
bok choy, at this point.
You're done! If it's too thick, add a little water -- if it's too thin, simmer for a bit longer.
Put on top of rice, or eat alone!
